Oh, goodness, it’s been a long time since the last post! So much has changed. So many new flavors, new methods, new designs—change is good.
Since I started making chocolate bonbons, I’ve learned so much along the way, as one does, about the process and what works best for me. I mean, it’s been four years since I first gave it a go.
It still shocks me to look back at my earlier chocolates—I can see all the errors and areas that needed improvement, but obviously, I didn’t know back then!
Tempering cocoa butters, three different types of chocolate and 35 different chocolates later, I honestly couldn't imagine the progress.
So, to anyone picking up a new skill or trying to learn something, no matter how much time
you put into it, you have got to start somewhere!
